8 Essential Kitchen Tools for a Stress-free Christmas!

Cooking is easy and fast when you have the right equipment and tools. With Christmas right around the corner, the kitchen is bound to be one of the busiest spots in the house this festive season! From Christmas dinners to New Year’s Eve parties, food is sure to be the highlight of the festivities!
Work through this list and make sure your kitchen is adequately stocked and ready for action – prepping and cooking Christmas dinner will be a breeze!

1. Food Processor

You might think that having a food processor might be a bulky equipment to have around at such a busy time – but the Cuisinart Mini-Prep® Plus Processor will come in handy when you’re prepping Christmas Dinner and snacks! Use it to make salsas, dips and more! The Mini-Prep® Plus is the perfect little helper for small food preparation, from chopping herbs or bread crumbs, to finely grinding hard cheese. Its versatility lies in the special Auto Reversing Smart Blade™, which makes it easier to process both soft and hard foods. Designed in Italy, the Mini-Prep Plus’ sleek touch pad controls afford easy cleaning and an elegant look.

Try your hand at these recipes with the Cuisinart Mini-Prep® Plus Processor: Wild Mushroom Soup, No Bake Mini Matcha Oreo Cheesecakes, Roast Pork Loin with Apple Chutney

2. Measuring Jugs

Now we know everyone has measuring cups & jugs, but the Jamie Oliver Tilt and Mix Bowls with Lid (Set of 3) eliminate the need for dirtying extra measuring cups, while their non-drip pouring spouts ensure that ingredients dispense neatly into muffin tins, bread pans, or cake pans. The set includes bowls in 1-liter, 1-3/5-liter, and 3-liter capacities, each of which features gleaming stainless-steel construction that work well for both wet and dry ingredients. Furthermore, the uniquely shaped bowls sport 45-degree non-slip silicone flat spots on their bases, which allow for tilting them comfortably to get at all the ingredients while whisking–no more clumps of flour or unmixed butter at the bottom. Best of all, the large 3-liter bowl comes with a tight-fitting polypropylene lid with a built-in spoon rest!

3. Chopping Board

Let’s talk turkey and other meaty fare. The redesigned Epicurean® Carving Board features a generous juice groove that easily collects drippings for gravy and sauces. It is a hearty board perfect for roasts, hams, and large birds – an absolute must-have to avoid ruining your countertop and any Christmas mishaps!

4. Meat Thermometer

When cooking in large quantities, uncooked meat is definitely one of the most common worry of home cooks. Forget charts, timers and  the poke test. The best way to guarantee that your turkey, chicken and other meats are properly cooked is to check its internal temperature. The Meat Thermometer from Cooper-Atkins is NSF® certified and includes a 6″” / 15.2 cm stem. It includes HACCP minimum temperatures for poultry, ground beef & pork, and fish for easy reference as well!

5. Pastry/Basting Brush

Don’t underestimate how useful a plain-looking pastry brush can be! Most commonly used for a quick egg-wash over pastries, the brush can also be used to grease pans with melted butter, or used to brush sauces or marinade on meat or fish. It can even be used to remove excess flour, salt or herbs from another surface if you had a shaker mishap! The Lacor Silicone Pastry Brush will do the job perfectly – the heat resistant silicone bristles on this pastry brush are designed to make brushing on butter and other sauces effortlessly and is easy to clean and odour-free!

6. Fine Grater

This little gadget is another absolute must-have in the kitchen! Use the Microplane Professional Series Fine Grater to grate horseradish over smoked salmon, lemon zest over your pies and more. While there’s no other tool that does such a fine job of turning thin citrus skin into beautiful, fragrant zests, there are a few more foods that it can handle with great finesse. The Microplane can turn a block of chocolate into beautiful flecks for garnishing pies and cupcakes. You can also run your cinnamon stick or other whole spices over the Microplane for a fragrant drink or dessert. It can also turn the flesh and seeds of a chilli or jalapeno pepper into tiny pieces so you just taste that mild kick in your food!

7. Balloon Whisk

A great whisk is a great kitchen essential – especially so with the holiday season coming up! The uses of a balloon whisk are not just used for whisking eggs and cake batter. It can also be used to whip cream, lightly mixing together dry ingredients in lieu of sifting, and even making your salad dressings! The User-friendly Magisso Balloon Whisk is easy to wash. The handle, held together by magnets, splits into two, unfurling the stainless steel wires so they can be thoroughly wiped and cleaned!

8. Blender
Having a blender not only whizzes up smoothies in no time, but it’s also a great equipment to have on hand to make spreads, soups, dips and much more! Cook homemade soups from start to finish or blend up your favourite smoothie with the Cuisinart Blend and Cook Soup Maker. The built-in non-stick heater plate provides the perfect surface to sauté ingredients, simmer or boil soups, and with a touch of a button blend it all to a perfect consistency. Crush ice and blend everything from smoothies to frozen cocktails.

Q: What is one of your favourite products that you like to use in the kitchen?
A: I probably use my chef’s knives more than any other tools in the kitchen. I don’t advocate any particular brand as long as they are sharpened regularly and properly.

Q: Christmas is right around the corner – what do you think would be the Ultimate Gift to give a friend who is a cooking enthusiast?
No matter how good a chef you are, it’s not good cooking for yourself; the joy is in cooking for others. Therefore I’ll choose a pasta maker – the best advantage of utilizing a pasta maker is that your pastas will at all times be fresh. This freshness will give them a sharper and more delicious taste. It is soft, chewy, supple, and the sauce simply clings to the pasta, coating it decadently and easily. In addition, you know what you add into your fresh pasta – including flavours like ground spices and herbs!

As ToTT celebrates its 6th Birthday this October, we hope to continue inspiring all to Cook, Bake and Host by organising conducting cooking classes that are centred around healthy eating! These include collaborating with various non-profit organizations including Singapore Cancer Society, Food Bank, and Food from the Heart.

In collaboration with Singapore Cancer Society (SCS), we are excited to organise and conduct a cooking class for the SCS Rehabilitation Centre Nutrition Programme. SCS Rehabilitation Centre clients (in the SCS ‘Specialised Rehabilitation Programme’ and ‘Next Step’) will learn how to prepare a nutritious three-course meal with ToTT Chef Instructor Michele Ow that is easy to prepare and packed with wholesome ingredients! Dishes include:

We are also happy to announce that in collaboration with Simply Her, our official media partner, ToTT will be organizing its first-ever bake off for a cause with Chef Mimi Wahadi! This bake off is open to public and encourages everyone to flour their surfaces, grease their tins, break their eggs and start baking artisanal cupcakes!

Half of these lovingly-baked cupcakes will be donated to Food from the Heart, a non-profit voluntary food distribution programme that channels surplus food to those in need.

We interviewed Chef Mimi and here’s what she had to say!

Q: Why did you decide to volunteer your services for this bake off?
A: Giving back to the society through baking has always been one of my life satisfaction.

Through this, I can share my love for baking, knowledge and techniques to baking enthusiasts who will in turn spread the love of baking to others, but at the same time do my part as a community who cares!

I hope and believe that this will raise more awareness for the community to do more for a good cause and cheer the underprivileged with these sweet treats!

Q: Why did you select these specific recipes for this class?

A: Simply because I love local food and ingredients!

As a Pastry Chef by profession, I love to create and improvise on recipes mixing western and eastern and turning them into fusion.

For the Chendol Talam Cupcake, I describe it as my local twist on the western cupcake! Instead of creamy frosting, I choose to frost the cupcake with a concoction of hoon kueh flour, pandan water and of course GULA MELAKA! I believe it resonates well with Asian tastebuds and those people who do not prefer to have creamy cake but just want a nice simple fuss free cupcake to go along with your kopi or teh! If you ask me to describe it in one sentence, it will be KUEH IN A CUPCAKE!

And the same goes for the teh tarik cupcake. I love the idea of turning our unique local drink into a cake. It is a out of the box recipe that uses the FRENCH technique to do up the mousseline frosting! Which Singaporean do not love their TEH TARIK?

This September, discover the rich and delicious taste of Malay cuisine that is as diverse as it is tasty! Savour this rich cuisine that encompasses a wide variety of vegetables, meats, spices and other ingredients that are filled with wonderful flavours. Here are six of some of our favourite dishes that you can try at home this Hari Raya Haji!

1. Nasi Lemak with Homemade Ikan Bilis Cincalok Sambal

The fragrant Nasi Lemak is a favourite amongst many and often eaten for breakfast, lunch and dinner! There is nothing quite as satisfying as a scrumptious plate of Nasi Lemak – the aromatic rice can even be eaten alone with sambal! Try Chef’s Eric version with homemade Ikan Bilis Cincalok and you’ll be grabbing for seconds!

2. Mee Rebus Deluxe

Also known as Mi Kuah, Mee Rebus is a noodle dish that consists of yellow egg noodles cooked in a spicy, slightly sweet curry-like gravy. Perfecting the sauce can be a challenge, so here is the secret! Chili paste and spice paste are fried till fragrant then combined with dried shrimps and peanuts. Ingredients for gravy are then mixed together and brought to boil. The noodles are blanched and covered in spoonfuls of sauce. You can adjust the spiciness according to your liking!

3. Ayam Rendang

Ayam Rendang is a popular Malay dish – a chicken stew with different spices and coconut milk that is full of flavour! Cook it low and slow for the spices to blend and for the chicken to become tender. Serve it with coconut rice or white rice – the gravy alone is enough to leave you wanting seconds!

4. Assam Fish Curry

Love spicy and sour food? This Assam Fish Curry is definitely a dish you have to try! It has plenty of flavour profiles – addictively spicy, sour, sweet and savoury. It’s also loaded with vegetables (think eggplants and tomatoes) and is so satisfying with rice! Unlike your usual curries, this Assam Fish Curry does not call for the use of coconut milk – so you don’t have to feel guilty about having an extra portion!

5. Pandan Custard Agar Agar

The perfect dessert to end heavy meal, this Pandan Custard Agar Agar is light, refreshing and can be kept in the fridge for days. The pandan paste adds a lovely fragrance and a hue of green to the agar agar! Agar is a gelatinous substance that produces a firmer texture than gelatine and sets relatively quickly at room temperature. Try this recipe by Chef Julie Yee for an agar agar that is delightfully smooth with a hint of pandan and coconut!

Featured Interview with Sake Sommelier Takayoshi Aoki

Q: Have you ever experienced Japanese sake and food pairing? Which pairing of sake and food do you like?

A: Similar to wine, sake can be paired with food according to certain rules. If you would like to know more, I recommend you to join me at ToTT’s Sake Paring Dinner on Friday, 29 April at Sumiya Suntec City. This Japanese restaurant is managed by International Sake Sommelier Naoki Tsuzuki, who is also the master chef of the award-winning fine dining restaurant, Kuriya Dining.

At this sake-pairing dinner, each of Master Chef Tsuzuki’s creative dishes will be paired with his choice of sake. All sake brands used for this event have distinctive characteristics, two of which are rare premium sake that are available exclusively at Sumiya.

Sake pairing works just like wine does. The key to pairing sake and food is simple – typically, lighter dishes are paired with light and smooth sake and rich foods with rich-flavoured and full-bodied sake. For example, a light dish such as whitefish sashimi goes well with mild-flavoured Ginjo-shu and Dai Ginjo-shu while grilled fatty winter fish is best paired with aromatic and full-bodied Junmai-shu.

Contrary to popular belief, sake can also be enjoyed with a wine glass. When poured into the glass, sake comes into contact with oxygen and this oxidization will improve the distinctive aroma of sake. By using a wine glass, the sake’s rising aroma will allow you to fully enjoy  its elegant fragrance.  If you cannot finish drinking an entire bottle, do be adventurous and enjoy the remainder with a wine glass on the next day. You might make a new discovery of the sake!

Please take this opportunity to experience the wonderful world of Master Chef Tsuzuki’s fine Japanese cuisine and its premium and seasonal sake.

Prior to this event on the same day, I will conduct a sake cocktail-making demonstration at ToTT @ Suntec. There, I will introduce two kinds of sake cocktails which can be made easily with your leftover sake. I will also introduce useful utensils to make sake cocktails.

Master Chef Tsuzuki and I look forward to welcoming you at the Sumiya Sake-Pairing Dinner. Thank you.

Takayoshi Aoki
International Wine & Sake Sommelier

Notes:
Sake is classified according to the proportion of the rice grain that remains after polishing. If the rice polishing ratio is 60% or lower (meaning that 40% or more of the grain is removed), the sake produced with it is referred to as Ginjo-shu or Junmai Ginjo-shu. When the rice polishing ratio is 50% or lower (meaning that 50% or more of the grain is removed), the sake is referred to as Daiginjo-shu or Junmai Daiginjo-shu.

The term Junmai-shu refers to sake made with nothing other than rice, water, and kōji (mould culture for converting rice starch to sugar). When Junmai-shu is made with rice of a lower rice polishing ratio, it is referred to as Junmai Ginjo-shu or Junmai Daiginjo-shu.

9 Tips to Hosting a Perfect Dinner Party

Hosting a large party is always fun, but there’s something special about a more intimate, grown-up gathering. Inviting friends over for a dinner gathering or hosting that annual dinner party with your colleagues?  This is the perfect guide for you. We’ve prepared a list of pointers to keep in mind when throwing your next dinner party!

1. Invitation list

When hosting an intimate dinner party, it’s essential to have an accurate guest count. We recommend sending out invitations at least two weeks in advance and requesting guests to RSVP no later than a week before the event. Grocery shopping becomes much easier when you have ample time to prep, plan your menu and portions!

2. Setting the right mood

A beautifully-set table is the canvas for a sumptuous meal. Fresh flowers make for a lovely centrepiece but for a more durable feature that also doubles as a conversation starter, try arranging an assortment of the Luminara Flameless Pillar Candles. The attractive realistic flameless candle will brighten your dining table instantly without the worry or risks associated with real candles.

Dine without the worry of food and wine stains on your table cloth when you use Garnier Thiebaut’s 100% two-ply twisted cotton as the linen for all your dishes. Made in France, the fine damask fabric is made with a special Green Sweet stain-resistant technology to protect the cotton from stains and make your life happier! The classy and bespoke designs available also add an instant touch of elegance to your dining table.

3. Dining utensils

As a general rule of thumb, no matter the formality of the event, set the silverware on the table in the order that it will be used, from the outside in. Dessert utensils should always be placed horizontally above the plate, or brought in later together with the dessert.

For cutlery that is functional enough for everyday use and also elegant enough for an intimate dinner gathering, the Safico Harlan series will do a perfect job. The simplest table setting will be transformed by the sleek elegance of the Harlan series from Safico to impress even the more particular connoisseurs! The high gloss polished finish features a simple and sleek design that will also mix well with your existing flatware pieces. A full range of coordinating Harlan pieces is also available if you are inclined!

4. Shop smart

Always be ready to improvise your menu. Whenever you are doing your grocery shopping, be on the look-out for products that are on markdown or promotion – you never know what you might find!

5. Hors D’oeuvres (Party appetizers)

When your guests start streaming in, don’t stress yourself if not all your dishes are complete. Having Hors D’oeuvres set out when guests arrive will give you some time to wrap up your cooking while they mingle and snack. An easy but delectable one would be to set a cheese platter with crackers and wine for guests to dive in before the actual dinner; even better if you have a visually appealing cheeseboard that could double as a beautiful centrepiece! If possible, place the platters at different spots around your living room/lounge area to prevent guests from crowding in one corner of the room.

6. Dinner

Before planning your dinner menu, ensure that you have checked with all your guests if they have any dietary restrictions or food allergies to prevent anyone from going hungry at dinnertime! To be on the safer side, it would also be best to prepare dishes that you’ve made before; i.e. tried and tested to minimize any hiccups on the actual day of cooking! Need some inspiration? Browse our recipe page for tons of ideas. Here are some of our favourites appetizers and main course:

Appetizers: Scallops in Buerr Blanc Sauce, Spicy Pumpkin Soup with Lemongrass and Coconut , Albondigas (Mealballs)
Main courses: Stuffed SousVide Boneless Chicken Leg, Crusted Herb Rack of Lamb

7. Sweet endings

End the night on a delightful, sweet note with the perfect dessert. If you would like to keep it simple, having beautifully decorated cupcakes or a sinful chocolate cake presented on a lovely cake stand would do the trick. Check out our dessert recipes for classics such as Chocolate Mocha Bundt Cake or a fancy individual Crunchy Hazelnut Chocolate Tartlets!

8. Drinks

Keep things simple and classy by going for wine and one signature cocktail. The Magisso Champagne Cooler will ensure that your drinks will be kept cool and chilled through-out your dinner. You can even write or design a personal message on the side of the ceramics with a chalk! The award-winning range of Magisso products can be found here.

9. Relax and have fun!

Last but not least, remember to relax and enjoy yourself with your guests! Enjoy their company, the atmosphere and the spread that you’ve put all the effort into preparing. It’s time to kick back and fun!

So, what’s on the menu of your next dinner party?
