INGREDIENTS                                          

  • Blueberry Streusel Cheesecake
    • Group 1
      • 300g Cream Cheese
      • 110g Castor Sugar
      • 1 tsp Lemon Juice
      • 20g Plain Flour
      • 1 tsp Vanilla Paste
      • 3 Egg Yolks
    • Group 2- Fold in
      • 50g Fresh Whipped Cream (35%)
      • 2 Egg Whites
      • 40g Castor Sugar
      • 2/3 cup Blueberry Pie Filling
  • Streusel Crumble
    • 100g Butter
    • 100g Fine Sugar
    • 100g Plain Flour
    • 100g Almond Powder

DIRECTIONS FOR BLUEBERRY STREUSEL CHEESECAKE

  1. Beat cream cheese and lemon juice at slow speed for 5mins.
  2. Add in sugar slowly until all completed.
  3. Add in flour & mix well.
  4. Pour in the yolk slowly.
  5. Beat egg white till soft peak.
  6. Fold in the whipped cream & egg white into cream mixture.
  7. Bake in Baine-Maria (hot-water bath)150C for about 1hr. Leave cake in oven (open oven door)

DIRECTIONS FOR STREUSEL CRUMBLE                                           

  1. Mix all ingredients using rubbing in method. Chill till use.

INGREDIENTS                                          

  • Sponge
    • Group A – Sift together
      • 130g Cake Flour
      • 2 tsp Baking Powder
    • Group B – Egg Yolk mixture
      • 6 large Egg Yolks
      • 120g Sugar
      • 1 tsp Vanilla essence
      • 10g Cake emulsifier
    • Group C – Egg White mixture
      • 6 large Egg Whites
      • 4 tbsp Sugar
      • ½ tsp Cream of Tartat
    • Group D – Butter mixture
      • 90g Salted butter (melted)
      • 2 tbsp Water
      • 2 tbsp Oil
    • Stabilized Whipping Cream Frosting
      • 1 tsp Gelatine dissolved in 1 tbsp warm water
      • 1 cup Cold Heavy Whipping Cream
      • ¼ cup Confectioners
    • Simple Syrup
      • ¼ cup Granulated Sugar
      • ¼ cup Water

 

 

DIRECTIONS TO MAKE THE CAKE

  1. Sift cake flour and baking powder into a bowl, and then set aside.
  2. Separate egg whites from egg yolks.

INGREDIENTS B                                         

  1. Beat egg yolks, emulsifier and sugar together till is egg mixture is thick and pale yellow in colour, add durian essence and continue beating for 2 more minutes.
  2. Lastly add in the sponge cake emulsifier and mix well. Set aside.

INGREDIENTS D

  1. Combine all ingredients in D. Mix well.
  2. Pour butter mixture to the egg yolk mixture and fold in using a hand whisk.
  3. Add flour mixture to the egg yolk mixture and slowly fold in.
  4. In a separate bowl, beat egg whites and cream of tartar until frothy.
  5. Add sugar to egg white mixture and continue whipping until stiff peaks form.
  6. Gently fold in a quarter of egg whites into the egg yolk mixture, and then repeat for the rest of the egg whites.
  7. Pour batter into 11 inch pan that is lined with greaseproof paper, and then bake for 30 minutes for 170°C until toothpick come out dry.
  8. Remove the cake pan from oven and leave to cool on a cooling rack.

DIRECTIONS TO MAKE STABILIZED WHIPPING CREAM FROSTING

  1. Put the cold water in a small saucepan. Sprinkle the gelatin over the surface of the water and let stand for 5 minutes (do not stir).  Place the saucepan over low heat and stir constantly with a wooden spoon just until the gelatin dissolves.  Remove the saucepan from the heat and cool to room temperature.
  2. In a mixing bowl, combine the whipping cream, sugar, and vanilla and beat until slightly thickened. Then, while beating slowly, gradually pour the gelatin into the whipped cream mixture.  Then whip the mixture at high speed until stiff.

DIRECTIONS TO MAKE SIMPLE SYRUP

  1. In a medium saucepan combine the sugar and water. Bring the water to a boil, stirring, until sugar has dissolved.  Remove from the heat and allow to cool.

DIRECTIONS TO ASSEMBLE THE CAKE

  1. Reserve some banana for decorating the cake. Slice the remaining banana into thin slices (about 4 slices per banana).
  2. Slice the sponge cake horizontally into 2 layers.
  3. Place one sponge layer cut-side up on a cake board or serving plate and lightly crush the surface with the simple syrup. Spread a thin layer of whipped cream over the cake layer and arrange the banana slices over the surface.  Spread an additional layer of whipped cream over the banana.  Brush the cut-side of the second layer with the simple syrup and place it over the first layer.  Frost the sides and top of the cake with the remaining whipped cream.  Decorate as desired and garnish with fruits.

INGREDIENTS                                          

  • Choux Puff
    • 60g Unsalted Butter
    • 90ml Water
    • 90ml Milk
    • 2g Salt
    • 80g Plain Flour
    • 2 Large Eggs (120g)
  • Cempedak Pastry Cream
    • Pastry Cream
      • 500g Whipping Cream
      • 400g Milk
      • 200g Sugar
      • 100g Corn Flour
      • 100g Milk
      • 160g Egg Yolk
      • 50g Unsalted Butter
    • Cempedak Chantilly Cream
      • 100g Pastry Cream
      • 300g Whipping Cream
      • 200g Non-Dairy Whipping Cream
      • 300g Cempedak Meat

DIRECTIONS FOR CHOUX PUFF

  1. Preheat oven to 200°C.
  2. Sift both flour and salt in a bowl.
  3. In a medium pot, heat up butter, water and salt until the mixture boils.
  4. Add the sifted flour. Continue to stir until the mixture resembles a ball and no longer sticks to the side of the pot.
  5. Remove from heat and cool it down a bit before incorporating the eggs with a mixer gradually until a thick smooth mixture is achieved.
  6. Transfer the dough into a piping bag fitted with a medium plain nozzle.
  7. Pipe the choux into circular shape on a tray lined with baking parchment. Bake in the oven for approximately 20 minutes depending on your oven.
  8. Quickly open the oven to release the steam.
  9. Turn the oven to 190°C and continue to bake for another 8-10 minutes.
  10. Remove from oven and cool off before use.

DIRECTIONS FOR CEMPEDAK PASTRY CREAM

To make the Pastry Cream

  1. In a bowl, combine the 100 gm of milk together with corn flour and egg yolk. Mix and sieve.
  2. Combine milk and 400 gm of sugar in a pot and put to boil.
  3. When boils, add the sifted mixture and continue to whisk till it thickens.
  4. Add butter whisked vigorously till a smooth homogenous mixture is achieved.
  5. Cool before use.

To make Cempedak Chantilly Cream

  1. Whipped both pastry and whipping cream to stiff peak.
  2. Coarsely grind the cempedak meat in a blender.
  3. Fold the cempedak into the pastry cream.
  4. Followed by both cream.

Chill for 15 minutes and pipe into the cream puffs.

  • Chocolate Mousse
    • 100g bar Good Quality Plain Chocolate
    • 50ml Milk
    • 200ml Double Cream
  • Chocolate Coated Strawberries
    • 1 packet Strawberries
    • 1 bar of White Chocolate
    • Orange Food Coloring
  • 1 packet of Oreo

DIRECTIONS FOR CHOCOLATE MOUSSE

  1. Melt the chocolate in a bowl over a pot of simmering water (Double boiling)
  2. Heat the milk until it starts boiling then whisk in melted chocolate. Leave it to cool/
  3. Whip the cream until soft peak, then fold into cooled chocolate.
  4. Pour the chocolate mousse into La Parfait jars and allow it to cool.

DIRECTIONS FOR CHOCOLATE COATED STRAWBERRIES

  1. Melt a bar of white chocolate and add in a drop of orange food coloring.
  2. Dip the strawberries into the melted chocolate.

DIRECTIONS OF ‘DIRT’

  1. Remove the cream filling and blend the oreo biscuit until crumbly.

ASSEMBLY 

  1. Pour the chocolate mousse into Le Parfait jars.
  2. Top oreo as ‘dirt’.
  3. Top chocolate strawberries as ‘carrots’

INGREDIENTS

  • Mochi Pancake
    • 150g Glutinous Rice Flour
    • 150g Hot Water
    • 2 tbsp Oil
    • 40g Caster Sugar
  • Red Bean Paste
    • 200g Red Beans, soaked in water overnight
    • 150g Caster Sugar
    • 1-2 tsp Fresh Ginger Juice
      • May use store bought red bean paste as substitute too

DIRECTIONS

  1. Bring soaked red beans to a boil, then simmer for 1-2 hours. Until beans turn mushy when pressed with fingers.
  2. Drain the beans and mash with a fork or blender.
  3. Return mashed beans to pot, add sugar and ginger juice. Cook the mixture down to spreadable paste consistency; stirring constantly to ensure the bottom of pot does not burn.
  4. To make mochi pancake, add oil and sugar to water and bring to a boil. Make a well in the center of glutinous rice flour and pour the hot water mixture in.
  5. Mix vigourously with a pair of chopsticks or wooden spoon until dough is formed.
  6. When dough is cool enough to touch but still fairly hot. Fold and knead until the surface is smooth. Add a little more water or glutinous rice flour if it is too dry or wet.
  7. Set aside to rest for about 5 minutes, covered in cling film or a damp cloth.
  8. Divide dough into 6 portions and roll them out to around 5mm thick. Spread desired amount of red bean paste on one side and fold the other side over and seal by pressing the edges.
  9. Using the Bruno Grill Plate attachment, turn the heat to medium-high and coat hotplate with a bit of oil. Slowly grill pancakes until golden brown and on both sides.
  10. Cut into bite sized pieces and enjoy with Chinese tea.

INGREDIENTS:

  • 200g Digestive Biscuits
  • 60g Butter, melted
  • ½ cup Thickened Cream
  • 80g White Chocolate, melted and cooled
  • A handful of fresh Raspberries

DIRECTIONS 

  1. Place food processor and process till finely chopped.
  2. Add melted butter and combined till mixture till combined.
  3. Pour mixture into Nordic Ware Mini Heart Baking Cake Pan evenly. Using the back of a metal teaspoon, press mixture over base and sides. Refrigerate for 30 minutes or until firm.
  4. Whisk cream until soft peaks form and add melted white chocolate. Fold until combined.
  5. Pour the mixture into the cake pan evenly.
  6. Garnish with fresh raspberries.

INGREDIENTS             

Churro Twists  

  • 1 Sheet of Puff Pastry, thawed
  • 4 tbsp Granulated Sugar
  • 1 tsp Ground Cinnamon
  • Eggwash (one egg beaten with 1 tbsp milk/water)

Chocolate Sauce 

  • 1 cup Semisweet Chocolate
  • 1/2 cup Heavy Cream
  • 1 tbsp Unsalted Butter, softened at room temperature
  • 1/8 tsp salt

DIRECTIONS

  1. Line 2 baking sheets with some parchment paper. In a small bowl, mix together the sugar and cinnamon and set aside.
  2. Lay out the puff pastry on a lightly floured surface, roll it out so it’s around 1” bigger, brush the egg wash all over the top, then sprinkle evenly with the cinnamon sugar mixture.
  3. Cut about 1 inch strips lengthwise using a pizza cutter, then take the two ends and give it a few twists. Place on baking sheet.
  4. Preheat your oven to 190°C, bake the twists for 15 to 20 minutes or until golden brown.
  5. While the twists are cooling, prepare the chocolate sauce.
  6. In a small saucepan, add all the ingredients for the sauce, stirring constantly on medium-low heat, cook the mixture until everything is evenly melted then pour the sauce in a dish.

INGREDIENTS:

Ingredients for the Sponge

  • 10 Egg Yolks
  • 5 Egg Whites
  • 10g Emulsifier
  • 150g Caster Sugar
  • 100g Plain Flour
  • 1 tbsp Full Cream Milk Powder
  • 1 tbsp Corn Flour
  • 150g Butter
  • 1 tbsp Sweet Condensed Milk
  • 1 tbsp Plain Yoghurt
  • 2 tbsp Chocolate Paste
  • 1 tsp Strawberry Essence
  • Some red food colourings
  • Strawberry Jam to spread

Ingredients for the Chocolate Ganache

  • 250g Bittersweet Chocolate
  • 115g Whipping Cream
  • 1 tbsp Golden Syrup

DIRECTIONS:

  1. Preheat oven at 175°C. Grease and line 2 of 22x10x4cm pans.
  2. Melt butter in microwave, add in condensed milk and mix well.
  3. In a bowl, beat in high speed eggs and sugar till thick, fluffy and expand triple the size.
  4. Lower the speed and add in yoghurt, sifted both flours and milk powder.
  5. Add in about ¼ of the batter to the melted butter and mix well.
  6. Pour in the mixture into the remaining batter and fold in gently.
  7. Take 1/3 of the batter and mix in strawberry essence and some red food colourings.
  8. Pour the chocolate batter in 1 of the pan while the strawberry batter in another tin.
  9. Tap all the pans gently before putting in the oven to release the trapped air bubbles.
  10. Bake for 20-25mins or till skewer test comes out clean.
  11. Remove from oven immediately invert to cooling rack. Let cool.
  12. Spread jam on the inverted strawberry cake, top with chocolate cake, and spread jam on it, top with the chocolate cake.
  13. Cut the cake into 3 x 3 cm small square.
  14. Prepare the ganache by melting the chocolate, heavy cream and golden syrup using the double boil method.
  15. Leave ganache to cool for 10 minutes to thicken. Coat ganache over the small cakes. Decorate with some white chocolate.

Ingredients for Crumble Topping

  • 260g All Purpose Flour
  • 220g Brown Sugar
  • 340g Unsalted Butter
  • 6g Cinnamon Powder
  • 230g Unsalted Butter
  • 270g Caster Sugar
  • 100g Whole Eggs
  • 260g All Purpose Flour
  • 6g Baking Powder
  • 5g Salt
  • 4 halves Canned Peaches

DIRECTIONS:

  1. To make the crumble topping, follow step 2.
  2. Combine all ingredients in a mixer until well combined and resembled a crumble mixture. Use as required.
  3. To make the cake, follow steps 4 to 12.
  4. Pre heat the oven to 175°C.
  5. Sift flour, baking powder and salt.
  6. In a mixer fitted with a paddle beater, cream the butter and sugar till light.
  7. Add eggs gradually. Continue to beat until batter is light and fluffy.
  8. Add the sifted dry ingredients. Beat till just combined.
  9. Spread batter evenly in the 7 inch round pan.
  10. Layer the peaches evenly on the surface of the batter then top with the crumble topping.
  11. Bake for approximately 20-30 minutes till color are even.
  12. Use a testing pin to check the doneness.
