INGREDIENTS:
- 6g Gelatine Sheet
- 2 Egg Yolks
- 50g Sugar
- 125g Coconut Milk
- 5g Pandan Paste
- 200g Whipping Cream
DIRECTIONS
- Bloom gelatine sheet.
- Whisk egg yolks and sugar together.
- Add coconut milk and pandan paste.
- Heat mixture till 83C.
- Add in bloomed gelatine and cool to 35C.
- Whisk cream to soft peaks.
- Fold in whipped cream in creme anglaise.
