Savour this all-star, easy-to-follow Roesti Potato with Chef Eric!

INGREDIENTS:
- 4 large Idaho Potatoes, peeled
- Pinch of Nutmeg
- Oil for cooking
- Salt and Pepper
DIRECTIONS:
- Grate the potatoes with a Japanese mandolin slicer into medium shreds. Alternatively use a box grater. Add nutmeg and season lightly with salt and pepper.
- Heat a non-stick omelette size pan with some oil. Place shredded potatoes in pan and cover. Cook over medium heat for 4-5minutes.
- Using a plate larger than the pan, cover the pan and flip over. Add some oil and slide the potatoes back to the pan and cook for another 4-5 minutes without covering.
- When both sides of the roesti are cooked and golden brown serve hot with the condiments.
