1. SALTED EGG YOLK

Just like parmesan, salted egg yolks are incredibly versatile. You can simply grate cooked egg yolks onto pasta, toast, or anything else you want to add a bit of oomph –the possibilities are endless! 2. GULA MELAKA

Gula Melaka or palm sugar is a type of sugar made from the sap of flower buds from the coconut tree, caramelised by boiling at low temperatures. The sweet mild caramel flavour is used extensively in many desserts like ice kachang, chendol, ice cream or as a general substitute to sugar. This is a well-loved ingredient by many Singaporeans.

3. PANDAN

Pandan, also known as screwpine, is a tropical plant prized mostly for its long, palm-like leaves. Pandan has a fresh, floral, earthy smell and taste, almost like sweet grass. From rice dishes and curries to homemade kuehs and cakes, pandan lends its distinctive flavour to many perennial classics. This recipe for Kaya uses homemade pandan extract and creamy coconut milk which gives it a silky smooth texture, perfect for your Kaya Toast and soft boiled eggs.

Do you sometimes notice a bunch of pandan leaves inside the taxi? Cabbies use it as a cheap, efficient, and natural air freshener. It also acts as a cockroach repellent.

4. LEMONGRASS

Lemongrass, being a prized cooking ingredient has many health benefits. It helps to aid digestion, relieve headaches and boost one’s immunity. Often used in curries, 1 bulb (or two) is used in the paste, and another bulb is used whole and dropped into the curry to give it an additional fragrance.

5. DRIED CHILLI

More chilli, please! Are you up for a fiery, spicy challenge? Chillies are also a good source of nutrients such as Vitamins A and C, as well as iron and potassium. The usage of dried chillies does not only makes the dish spicy but also provides a stronger taste and colour to the dish compared to fresh chillies.

Spice it up with this stir-fried Chinese dish that originated from Sichuan – Kung Pao Chicken. Try recreating this yummy dish in the comfort of your home and serve it with a bowl of rice, garnished with some green onions and sesame seeds.

A GUIDE TO CHEESE KNIVES

1. SOFT CHEESE

Brie and camembert lovers rejoice! 

Take the oozy mess away with the proper type of cheese knife to prevent your favourite cheese from sticking to it. These delectable cheeses are known for their amazingly mild taste and creamy, moist, and buttery textures that just seem to melt in the mouth.

2. SEMI-SOFT CHEESE

Semi-soft cheeses have a smooth, creamy interior with little to no rind. They are known for their high moisture content with flavour profiles that range from mild to pungent. Popular semi – soft cheeses are like Gouda, Port Salut and Provolone. These crowd favourites are great for slicing and snacking and make great additions to sandwiches and cheese platters. They melt beautifully, however their moisture content and relative softness can make them difficult to shred at room temperature.

3. SEMI-HARD CHEESE

A perfect balance of moisture and aridity, these cheeses provide a firm, slightly springy texture with a delicate blend of savoury and tangy flavours. Typically denser in consistency, the cheese is often made by compressing curds into a solid, draining them of any remaining whey in the process. Taken directly from their moulds, some cheeses (i.e. Edam and Jarlsberg) receive a coating of wax, thus avoiding the need for brine. Did you know that semi-hard cheeses are aged anywhere between 1 to 6 months depending on each specific type?

4. HARD CHEESE

As the name suggests, hard cheese is firm as they are aged longer, and thus, has a lower moisture content.  Often savoury, popular hard cheese choices are Parmesan and Manchego. The labouring process of production of hard cheese begins with separating and draining most of the whey before pressing the curd, which is then either brined to create a hard rind or waxed.  Finally, the cheese is aged for between 2 to 36 months, and in some cases even longer. The length of aging determines the intensity of the flavour. A well-aged cheese will be more flavourful, less creamy and grainier in texture.

MOLECULAR GASTRONOMY FOR KIDS

1. ICE CREAM IN THE BAG

Kids love ice cream, don’t they? Instead of buying, why not get your kids to make their own with this super easy recipe! You only need 5 ingredients to make this homemade ice cream that will delight everyone. Kids will love seeing how quickly they can make their own ice cream and learn the chemistry between salt and ice. Don’t forget to add their favourite toppings like sprinkles or for a healthy treat trying adding fruits instead!

2. ROCK CANDY

Know a budding scientist with a sweet tooth? It’s easy for you and your kids to grow a rainbow of homemade rock candy crystals with a little kitchen chemistry. Making their own rock candy is a fun and tasty way to grow crystals and see the structure of sugar on a big scale.

Tip: Crystals will form on a cotton or wool string or yarn, but not on a nylon line. If you use a nylon line, tie a seed crystal to it to stimulate crystal growth.

3. POPPING BOBA

Make bubble tea and have your boba party at home! Popping Boba are little flavoured jelly balls filled with juice that burst in your mouth when you bite into them This ingenious process is made of a technique called reverse spherification. Sounds complicated? Just follow our recipe and have a ball of a time with the entire family.

You can add that tantalizing juice balls into any desserts you like and enjoy that burst of flavours with every bite.

4. POWDERED NUTELLA

Add a degree of fun and creativity to meals with maltodextrin, a food-additive that is made from starch and is used commercially to make things like ice cream, puddings, and peanut butter smoother.  Fans of this chocolatey heaven in a jar would find this amazing as once it hits your tongue, it doesn’t stay powdered: it reverts to that gooey-smooth spread texture we all know and love.

5.FRUIT JELLY CAKE

Jelly is great for sensory play  and science experiments as its tactile, edible, smells great and also very versatile.  Rich in protein and minerals, agar-agar, also called kanten, becomes gelatinous when dissolved in water, heated, and then cooled. Tricks and Tips to care for your Non-Stick Cookware

TIPS & TRICKS TO CARE FOR YOUR NON-STICK COOKWARE

1. USE ONLY SAFE UTENSILS

Avoid using metal utensils on your non-stick pans as they may have rough or sharp edges which can damage your pans. Use wooden or heat-resistant silicone utensils to protect and prolong your non-stick coating.

2. USE LOW TO MODERATE HEAT

Too much heat on your non-stick frying pan can cause the non-stick coating to bubble and deteriorate its non-stick properties. As a guideline, use low to moderate heat and allow the pan‘s heat to rise to the desired temperature slowly. If you’re looking to sear, use a stainless steel or cast iron pan instead to achieve high temperatures and that perfect sear.

3. PREHEAT YOUR PAN

Using a fat like oil or butter before cooking helps the coating last longer but do avoid using cooking sprays. Using cooking sprays over time will cause residue to build up especially on the sides of the pan which is tough to remove and shortens the lifespan of the pan. Remember to first add the fat onto the cold pan before heating as the fats enhance the non-stick effects of the cookware. Most importantly, some non-stick pans can emit potentially toxic fumes when heated without a lubricant and this should be avoided.

4. USING FOR STORAGE

When you have finished your stir frys, use containers to keep your leftovers instead of storing  them on the pan. Food especially acidic ones can damage the coating when left for extended periods. Wash the pan with warm soapy water and a soft sponge.

5. CLEAN GENTLY

After use, let the product cool to room temperature before washing it with a soft sponge, plastic scrub or washcloths with warm, soapy water. Avoid using steel wool, stiff bristle brushes or scouring pads as they may scratch and damage the non-stick coating. If you have food residues that are stuck to your pan, let it soak in water for to help loosen the hardened bits before cleaning. The cookware must always be completely clean and dry before it is put away.

6. PROPER STORAGE

Proper storage is also an integral part of the overall maintenance of your non-stick cookware. When nesting non-stick pans, insert a paper napkin or tea towel between them to keep the bottom of one pan from scratching the non-stick coating of another.

ToTT Junior Chef Classes

The ultimate fun-filled Parent-Child Cooking and Baking Class. Under the guidance of our professional ToTT Chef Instructors, kids will learn to cook and bake from scratch!
Our classes include Asian Cuisine such as Japanese Udon, Western Cuisine such as fresh handmade pasta and pizza making and not forgetting Christmas festive classes.

ToTT Junior Chef: Pizza & Cupcakes

Master the art of making the famous Italian pizza.

Learn the science behind making the pizza dough and how to knead a perfect bouncy pizza dough base under the guidance of Chef Michele. Have fun topping it with your favourite ingredients and enjoy a delicious homemade pizza, just like if you walked into a Pizzeria in Italy.

No meal is complete without dessert! Learn to bake moist and fluffy red velvet cupcakes and make your own luscious vanilla cream cheese frosting. The sweet marriage of buttermilk and vanilla with a little cocoa brings the taste to another level!

At the end of the class, bring home your creations and share it with your family.

ToTT Junior Chef: Mermaid Buttercream Cake

Dive down to Atlantis with this Mermaid Buttercream Cake! In just under 3 hours, learn how to make vanilla swiss meringue buttercream and work with fondant to sculpt mermaid tails, seashells and other decorative ornaments. Chef Claire will also share the various tips and techniques of layering and frosting. So if you are hosting a tea party, don’t miss out on this class as you will be the next Mary Berry!

ToTT Junior Chef: Gingerbread House

Get a kick-start to holiday fun! Skip the prep and mess at home, and build your own Gingerbread House together with your child this Christmas at ToTT. Start off by learning how to prepare the gingerbread dough and assembling the baked pieces into your personal gingerbread house. Complete it by decorating with your favourite sweets, chocolates and icing – a perfect class for parents and children to celebrate the Christmas spirit!

It’s the most wonderful time of the year! There is nothing more rewarding than spending time together creating a delectable Christmas feast for the entire family. Join us in our festive baking and cooking session this festive season! In our special Christmas themed class, your little Chefs will learn to make wonderful baked goods inspired by Christmas traditions around the world.

Our popular charity baking classes are back for the fifth year running! Participants can sign-up for a variety of baking classes every Sunday in October for a token registration of $38, where they will be taught how to bake delectable cranberry cream scones, flaky egg tarts, mini chiffon cakes and more!
