Set aside.<\/li>\n<li>Fold sifted cake flour into the egg mixture, do not over mix. Carefully fold in the reserved butter mixture.<\/li>\n<li>Spread the batter onto a paper-lined sheet pan. Bake at 220\u00baC until light brown and springy to the touch.<\/li>\n<li>Set aside for assembling.\n<p><strong>For the Mango Mousse<\/strong><\/p>\n<\/li>\n<li>Prepare the workstation.<\/li>\n<li>Scale the ingredients.<\/li>\n<li>Place mango puree and sugar in a pot and heat it high enough to melt the sugar.
