Cooking the Perfect Steak!

There’s nothing more impressive than being able to cook a mouth-watering and juicy steak for your sweet valentine! Cooking an elegant piece of beef steak can be quite daunting for a beginner, especially when just a difference of a minute can determine whether your meat will come out rare, medium-rare or well-done.

Fret not, we’ve got you covered with this guide! So beat the queues this coming Valentine’s Day with a romantic home-cooked dinner with your special someone.

1. Selecting the Prize

With many different parts, it can be challenging trying to recall the differences between each type of cut. As a general guideline, you should keep these pointers in mind no matter what you are buying:

  • The meat should be in good colour (not pale) and appear moist but not wet.
  • The edges of the meat should be evenly cut instead of ragged.
  • If it’s pre-packaged, avoid those with tears or with liquids at the bottom of the tray.
  • It should also feel firm and cold to the touch.

If you’re looking for a quick cheat-sheet on what are the best cuts, here’s a summary:

Most Tender:

The Beef tenderloin (aka Filet Mignon) is your top choice. This is cut from the mid-loin of the cow and while it is not the most flavourful, it is undisputedly the part that is most tender.

Special Occasions:

If you don’t mind breaking your wallet a little, the Top Sirloin (the most premium cut amongst the loin), the T-Bone and the Ribeye are amongst the richest, most opulent steaks you can buy.

Grilling/Out-Door:

Beef steaks are awesome for the grill! Not only are all the above-mentioned meats great for grilling, the flank, skirt and tri-tip cuts are also good (marinate them beforehand for best results.)

2. Don’t immediately cook the steak!

When you first take a steak out from the fridge, the inside of the meat tends to be much colder than the outside. This means that any cooking done will be uneven as the outer layers of the meat will cook much faster with the interior being undercooked.

A good way to make sure that the steak is of even temperature before cooking is to let it sit on the counter for 20 to 30 minutes. This will bring the steak up to room temperature and will allow you to cook it with more precision! Finally, before you throw your steak onto the grill, remember to dap them with paper towels to get rid of excess moisture.

3. War Preparations

First off is to choose the right tool for the job. Ideally, you’ll want a cast iron pan or skillet. This is because they are naturally non-stick, great at retaining heat and the materials give a better sear than stainless steel pans.

Next off, instead of using oil, we prefer to add a knob of butter onto a hot pan. Yes, remember to ensure that you heat the pan till it’s very hot before you cook the steak too! Next up, sprinkle salt, black pepper or your favourite go-to seasoning right before you place the steak on the pan.

 The timing of this is crucial as salt will suck out the moisture of the meat if you add it too early.

4. Onwards, to the great sear!

Now add the steak to the pan, make sure there’s a loud sizzling noise else it means the pan is not hot enough and you should immediately remove the steak and heat the pan higher and longer.

While steaks of different thickness have different cooking times, on average, a 2cm-thick piece of steak should be cooked 2 – 3 minutes each side for rare, 3 – 4 minutes each side for medium-rare to medium and 5 – 6 minutes each side for medium-well to well-done.

Remember, turn the steak only once as the steak will dry out if you keep flipping your prized meat. Always use a tong so that you don’t pierce the meat and let the juices escape.

A trick to find out if your meat is currently at the right doneness is to touch the beef with your finger. The texture of the meat can be compared to the same texture of touching the area of skin below your thumb, at the different tension points as illustrated below.

5. The spoils of war

Always rest your steak before serving! This isn’t because your steak is tired but it’s to make sure it’s as JUICY as possible!

Rest it on a plate for the same amount of time you’ve cooked it, giving it ample time for the juices to redistribute throughout the meat like a sponge. If you had to make some adjustments to the cooking time for whatever reason and can’t remember how long you’ve cooked it, 10 minutes is a good benchmark.

5 Ways to Eat Clean!

As we approach 2019, many of us will be filling up our list of New Year resolutions. New Year New Me! Right? We’re here to help you with one of the most common problems for everyone hoping to pursue a healthier lifestyle, a guide on eating clean!

By the end of this article, not only will your digestive tract thank you, but you’ll also realize it’s not that hard at all. So here’s to us inspiring you to Cook, Bake & Host… healthily!

1.  Choose Wholegrain

We all love our carbohydrates and it’s a staple in many of our diets. While you might have heard this one before, you probably did not realize how much better whole grain is compared to refined grain.

This means choosing wheat, brown rice, barley, maize (aka corn), rye and oats. Avoid white bread, white rice or cornflakes at all costs!

So why do we refine grain? This is to give them a finer texture and improve their shelf life, but it also removes dietary fibre, iron, and many B vitamins. These are vital nutrition that the body needs for our daily tasks! Health benefits aside, people who eat more whole grains have an easier time losing weight and keeping it off long-term – here’s a slice of a tidbit for all you out here:

  1. In one analysis of 2,834 adults who took part in a large health study, people who consumed mostly whole grains were shown to be less likely to carry excess belly fat than those who consumed mainly refined grains. – U.S. National Library of Medicine

2. More Fruits & Vegetables

Something we have probably heard since we were growing up – “An apple a day keeps the doctor away”. Well, it’s undeniably true as they are the best source of fibre, vitamins and minerals that help combat inflammation and protect your cells from damage.

Make your salads as colourful as possible; doesn’t hurt to throw in some berries, apple or orange slices too! Be CAREFUL on the type of fruit juice you drink though as many contain sugar and other substances which are actually more detrimental than beneficial to your health.

In layman’s terms, you will fall sick less often, improve your immune system and worry less about big chilling words like diabetes, obesity, high blood pressure and cancer. So keep it clean and eat your greens!

3. Avoid Processed Foods

A lot about eating clean is simply the basic notion of trying to eat food at their most natural state. Processed food is the exact opposite of what we’re trying to accomplish by eating clean. Often times, this “processing” includes taking out fibre and other important nutrients from the food and replacing them with sugar, chemicals and god knows what!

Love breakfast cereals, bacon rashers, sausages, microwavable meals, granola bars or instant noodles? Repent, as these sinful indulgences are the worst kinds of processed food you can put into your body!

What’s more, our body digest processed foods and whole foods very differently. Processed food takes less energy to digest and absorb, making them one of the key culprits in causing weight gain. If you’re looking for a healthy way to burn those calories, eat whole foods like grains, legumes, nuts, fruits and vegetables!

4. Limit your Sugar Intake

Sugar, the ultimate villain in the world of eating clean, takes the form of some of the most appealing and delicious looking food in the world. Don’t be fooled! Sugar, especially in high amounts, is a one-way road to obesity, diabetes, fatty liver and a whole range of other diseases!

It’s not enough to just avoid sweet stuff! Sugar is cleverly deceptive and is often found in foods that do not taste especially sweet, like condiments and sauces.

Fortunately, you still can have your fill of sweet tasting foods through fruits and other whole foods. You also don’t have to worry about naturally occurring sugars found in fruit and dairy; they come packaged with fibre, protein or fat that helps mitigate the effect of sugar on insulin levels, making them very well balanced foods!

5. Cooking at Home

A brilliant way of making sure you’re eating clean is to cook at home! Eating out can make trying to stay clean an arduous task. From the flavourful MSG content to the oily and greasy wok hei we’ve all come to love, we can understand why it’d be an uphill task on a night out!

Cooking at home means you can control every ingredient of your meal, right down to the cooking oil. You should avoid trans-fat or vegetable oils that are highly processed and linked to heart diseases and weight gain.

In fact, you can exercise all of the previous tips when you choose to cook at home – choosing whole grain, adding more fruits and vegetables, avoiding processed food (remember to read the labels!) and limiting sugar in your meals is an excellent start to the perfect clean diet.

ToTT @ Century Square will be converting its 1,100sqft cooking studio into an exclusive pop up market where you can shop and learn more about your favourite kitchenware brands on 12 October 2018, 6 – 9 pm. Shoppers can expect live product demonstrations and exclusive deals during this event too!  What’s more, this event is complimentary! So come on down with your family for a fun night out.

3. Food From The Heart Classes

For the third year running, ToTT is once again bringing back its popular charity baking classes in collaboration with Food from the Heart. Participants can sign-up for a variety of baking classes every Sunday in the month of October, where they will be taught how to bake delectable Rustic Pot Pies, melt-in-the-mouth Egg Tarts or even Quiche Lorraine from scratch!

Half of everything baked will be donated to Food from the Heart, a non-profit voluntary food distribution programme that channels surplus food to those in need.

For a token registration fee of $38, each participant will receive a ToTT cookbook and learn how to bake these delicious treats!  Interested participants can sign up here!
